Jake seems happy to hear that his father will be preparing jambalaya on the planet. However, when Commander Sisko is serving Quark, he seems to be ladling out some kind of liquid like soup or gumbo. Jambalaya is a dry dish made with brown rice and meat, and would be doled out with a spoon.
When the Jem'Hadar first attack the Odyssey, the usual camera shaking effect is used to simulate the ship shaking. However, when it cuts to Kira and Bashir in their runabout, the same camera shaking effect continues, even though the Jem'Hadar had not attacked the runabouts yet.
Commander Sisko says the planet that he, Jake, Quark, and Nog are on is a lot like Earth during the early Devonian Period. However, they are walking through a lush forest with tall trees. During the early Devonian Period, plant life on Earth was limited to small shrubs. The first trees and forests didn't appear until the late Devonian Period.
Jake says the atmosphere of the planet they're on is 4% carbon dioxide. This level of carbon dioxide would cause immediate headaches, nausea, and dizziness in humans. Jake is probably reading the units on his tricorder wrong. 0.04% would be similar to Earth, like the other atmospheric composition data.
Jake tells the computer on the runabout to turn off the autopilot and take them back to DS9. The autopilot would be needed for the computer to fly itself, so disengaging it would be the opposite of what he really wants.
At the end of the episode, Eris shows no surprise at seeing Odo. Later in the series, it is established that Vorta recognize founders on sight and treat them with absolute reverence.
