Lupe says that paella is a dish from Mexico, and was made by her mother, grand and great grandmothers; but paella is the national dish of Spain, which it is famous for, and has nothing at all to do with Mexico, and is not known there. (This would be as culturally inappropriate as claiming that tacos are from Spain!) If travel has enabled some restaurants in modern times Mexico to serve it, it certainly would not have been known nor cooked by Mexicans in the time of Lupe's ancestors. Furthermore, paella has no fish, but a gag was written and the joke made by the butler around the dish containing a lot of fish. True, traditional paella has seafood, but never fish. (There is such a thing as chicken paella and chorizo paella, but not fish.)
