- Was the only original cast member who did not reprise her role in The Brady Bunch Variety Hour (1976). Geri Reischl was cast as "Jan Brady" instead. There were rumors that she didn't want to be associated with the Bradys, but Plumb has said in interviews that she was willing to do the variety show's original special episode, but could not commit to the five-year option for additional episodes.

- During her time on "The Brady Bunch" Eve wore braces. She was the first cast member to get braces. Her former co-stars Mike Lookinland and Susan Olsen would eventually get braces during the final season of "The Brady Bunch". After her braces came off Eve Plumb had to get glasses. For the episode "The Not-So-Rose-Colored-Glasses" the writers fixed it so that Jan had to get glasses.
- Was considered for the role of Regan MacNeil in The Exorcist (1973).
- Lives in LA, where she continues to act (mainly in guest spots on sitcoms), and also creates paintings and lithographs. (December 1999)

- According to Maureen McCormick in her autobiography, "Here's the Story: Surviving Marcia Brady and Finding My True Voice", Eve would often walk around the dressing room trailer shared by her, McCormick and Susan Olsen completely naked and often farted, and when the other two complained, told them to "get over it".
- Daughter of recording company executive Neely Plumb and dancer Flora Plumb. Sister of Benjamin, Catherine, and Flora Plumb. Her siblings Benjamin and Flora shared the same forenames and middle names as their parents, Benjamin Neely and Flora June, respectively.
- Member of the Laguna Beach Board of Adjustment/Design review board since February 2002. Became chair pro-tempore in March 2005, chairperson in February 2006 and retired from the board in January 2008.
- Her ancestry includes Czech/Bohemian (from her maternal grandfather), English, German, Irish, and Scottish.
